The C Diff Epidemic Is Worse Than Ever.
What are You Going to do About It?
Bacterial infections and infestations are some of the most common health conditions that we as humans have to face. Fortunately, they happen to be some of the easiest to treat in the scheme of things. If left untreated, however, they can lead to more complex conditions such as sepsis and death. This is especially true for one type of bacteria in particular known as Clostridium difficile, or C Diff for short.
C. diff is a particularly nasty bacteria that is most commonly contracted by people who have had to take antibiotics recently. This is due to the fact that antibiotics don’t just kill off the “bad” bacteria; they kill off all of the bacteria in your body.
Once the “good” bacteria in your intestines are wiped out, C. diff has a much easier time setting up shop and begin to multiply.
If you’re currently suffering from C. diff and are looking for relief, you may want to consider adding Saccharomyces boulardii to your daily treatment regiment. Also known as S.
Boulardii, this is a type of yeast that has been found in numerous studies to be able to destroy C. diff spores. This means that if you have C. diff and are suffering from its effects, S. Boulardii is able to kill off the C. diff in your intestines, as well as prevent it from coming back!
You can easily find prescription strength S. Boulardii online without a prescription. It is in the form of a pill that is rather large; you will need to take two of these each day until the bottle is finished.
At that time, you can either continue taking one pill per day for maintenance or you can stop taking them altogether.
While S. Boulardii is certainly a viable treatment option for C. diff sufferers, it is not a substitute for your doctor-prescribed medication.
It is always recommended that you consult your doctor before taking any type of treatment course for C. diff. It can be dangerous to self-medicate with over the counter treatments and prescriptions can often be hard to come by or too expensive for some people.
S. Boulardii is not a cure-all and it may not work for everyone, but when combined with doctor-prescribed antibiotics, it is an effective way to treat recurring C. diff infections.
Getting Started – Things You’ll Need
In order to brew your own S. Boulardii pills at home, you’re going to need to gather a few things. Check out your local homebrew supply store or look online for stores that sell yeast and make sure to buy the ingredients listed below:
● Pectinase (450 units)
● EC-1118 Yeast
Once you have all of your brewing equipment and the above ingredients, you can move on to the next step in the process.
Step One – Prepare Your Ingredients
The first thing that you should do is mix 1.5 cups of water with the pectinase and allow this to sit for at least an hour. You’ll want this to be as sterile as possible so be sure to not touch or bump the container in any way; otherwise, you’ll have to start over.
Next, take your yeast and mix it with ¼ cup of warm water. This too should be stirred well and set aside. After both of these mixtures have settled, you can move on to step two.
Step Two – Combine the Ingredients
Stir your pectinase mixture again before pouring it into the yeast water. Use a funnel if necessary to avoid messes. The yeast water will begin to foam slightly as the pectinase breaks down the cell walls of the fruit.
This is normal and means that your ingredients are mixing well.
After about half an hour of letting the ingredients settle, you can move on to step three.
Step Three – Letting It Sit
At this point, you want to seal your container very well and then place it in a dark, cool place. Your mixture should be ready to bottle in about 24 hours, but you can leave it for up to 48 hours before it becomes too overripe. The darker and more deserted the location, the more sour the final product will be.
If you leave it for two days or more, be sure to shake up the container every 12 hours or so to keep the ingredients mixed well. This is important because if you don’t, some of the pectinase may end up staying in one part of the mixture more than another.
Step Four – Bottle and Storage
Once your mixture has fermented enough for you, it’s time to bottle it up. You can use beer bottles, soda bottles, or whatever you want. You just need to clean them very well before use.
Carefully pour the mixture into your container of choice, making sure to not let any debris fall in. You can add a few raisins or a bit of fruit to each bottle for flavor if you’d like – just make sure that this doesn’t clog up the nozzle. Add the lid and cap and seal it shut as tightly as you can with the help of a bottle capper.
You now have homemade sour pills that you can take one to three of per day. It’s important to keep them in a cool, dark place and make sure to refrigerate them if possible.
If you don’t want to go through the hassle of bottling the pills yourself, you can always buy store-bought brands of S. Boulardii that have been pre-made for you, though these are typically not as strong as homemade pills.
Take one or two per day with water until your symptoms go away and you feel better. If you like, you can also add these into recipes to make them more palatable.
You’ll want to space out your doses so that you don’t overload your system with too much yeast. If you have C. diff, I’d recommend taking S.
Boulardii every other day until it goes away. Once you feel better, you can take one per day to maintain good digestive health.
I’ve included a recipe for some tasty chocolate truffles that contain S. Boulardii and are great ways to get your daily dose. These are just like the ones I make for special occasions!
Making Them Is Easy!
You Will Need:
4 oz. semi-sweet baking chocolate
1 tbsp. pure cocoa butter (optional)
1 cup heavy cream
¼ cup granulated sugar
1 tsp. vanilla extract
2 tbsp. sour pill suspension (such as Now Foods Saccharomyces Boulardii )
Melt your chocolate and cocoa butter in a microwave safe bowl in the microwave at 50% power for 2 minute intervals. Stir after each interval until fully melted.
Whisk in 1/4 cup of the heavy cream, the sugar, and the vanilla into the melted chocolate until fully incorporated.
Slowly add in the remaining cream while whisking vigorously to create a fluffy frosting like texture.
Add your sour pill mixture and whisk until evenly distributed.
Refrigerate for at least 2 hours to fully thicken.
Roll into whatever size truffles you’d like and refrigerate until ready to serve!
Store in an airtight container in the refrigerator for up to three days.
You can change up the recipe by adding in different spices and flavorings such as orange or mint essence.
Yields: 16 truffles
Note: These are meant to be ingested within three days after making them due to the fresh cream. They may last up to a week in the fridge, but their texture may suffer slightly.
Chocolate is used here instead of cacao to make these more palatable for those who don’t care for cacao’s bitter flavor.
If you want to make these dairy-free, then you can substitute the heavy cream with coconut cream or almond milk, but the texture won’t be as rich and creamy.
The sour pill suspension I use is Now Foods brand and can be found on iHerb. It’s important to buy one with at least 1 billion active cells, though 2-3 billion is ideal. If the dose is too small, it won’t be as effective.
If you don’t want to make truffles, you can always just roll the mixture into a ball and pop it in your mouth. I’ve done this when I didn’t feel like making truffles and it’s still quite delicious.
These will be very helpful to give to your friends and family who may be suffering from C. diff.

I’ve been getting a few comments lately from people asking me what kind of alcohol I recommend for cooking and different kinds of recipes that you can make.
The answer to that is: it depends.
Now, before everyone starts freaking out about my answer, let me explain…
The kind of alcohol you should be using for cooking is entirely up to what you want to cook and what you’re going to be using it for.
In other words, it depends…
Use Your Head
As with most things in life, common sense should be used. Things like using water instead of alcohol in most cases when cooking. Using a lighter spirit like vodka in a marinade to cook off the alcohol so that it doesn’t burn.
Using something with more flavor like a dark rum for a dessert sauce. Etc.
So while I’m not going to say that there is a “one size fits all” answer to using alcohol in cooking or even a list of what can be used for what, I can give you some guidelines based on the spirits you might have in your liquor cabinet right now.
Above all, read the recipe first and see what it says. Most of the time, it’ll give you a good idea of what you can use and what you should leave on the shelf. In fact, if a recipe calls for something sweet, sticky, or fruity, you’re much better off using fruit juice rather than alcohol.
With that said, here are some common types of spirits and their uses in culinary creations:
VODKA: (aka vodka) Probably one of the most versatile liquors out there today. You can drink it, of course, but it’s also commonly used in cooking and baking. It doesn’t have a strong flavor of its own so it won’t overpower a dish like, say, bourbon might.
In fact, if a recipe just calls for “alcohol,” you can safely assume that most any kind will do. Vodka is the preferred liquor to use when baking cakes, however, due to its ability to retain the moisture in a cake (or whatever else you’re making).
GIN: A favorite of mine. While it’s tasty enough to drink on its own (with a squeeze of lemon or lime), it can also stand out as the main flavor in a mixed drink. On the other hand, it has just enough neutral flavor that it won’t get in the way of the other flavors in a dish.
