Gluten free butterscotch cupcakes are a wonderful gluten free dessert for anyone with a sweet tooth. They’re are similar to the traditional butterscotch flavor, but are a bit sweeter than other butterscotch desserts. Making these cupcakes is really easy. You’re going to need the following ingredients: Gluten free flour blend (we used the following: tapioca flour, brown rice flour, white rice flour, potato starch, and xanthan gum), salt, baking soda, cream of tartar, granulated sugar, butter, eggs, butterscotch morsels, and vegetable oil.
The oven should be preheated to 350 degrees before you begin to make these cupcakes. Get out a muffin pan and spray it with nonstick cooking spray.
Combine the baking soda, cream of tartar, and salt in a small bowl and whisk them together. In a large bowl, mix together the sugar, flour blend, butter, eggs and butterscotch morsels with an electric mixer for three minutes on medium speed. Add the oil and mix for one minute more. Finally, add the baking soda mixture and mix for 30 seconds.
Using a spoon, fill the muffin cups 3/4 of the way full with the cupcake batter. Bake the cupcakes for about 20 minutes or until they’re golden brown on top. Allow the cupcakes to cool before frosting them.
To make the frosting, mix together 1 1/2 cups of powdered sugar and 3 tablespoons of milk in a bowl. Gradually add more powdered sugar until you reach your desired consistency. Add in a few drops of food coloring if desired and mix until the frosting reaches your desired color. Frost the cupcakes however you like and serve.
These butterscotch cupcakes are delicious and you definitely won’t be able to tell that they’re gluten free. Enjoy!
